Basic Soup - juliennesuppe - Minestrone - Vegetable Soup
Video Recipe - Basic soup / julienne soup is a simple vegetable soup which is very similar to the Italian minestrone. With a few changes it IS a minestrone. But I do usually this simpler version, and I'll just throw in whatever extra ingredients to spice it up a bit.
Ingredients
- 1 ½ liters (1½ quart) stock (vegetable , chicken , or fake-stock)
- 1 carrot
- 1 onion
- 2 stalks celery
- 1 potato
- 1 leek
- 25 g butter or oil
- 1 bunch of parsley.
- 1 tsp salt (depending on the salt in your stock. The fake-stock are usually salty enough.)
- pepper to taste
Directions
Cut the leeks as thinly as possible.
Slice all the remaining vegetables into julienne .
Brown the vegetables lightly in the butter/oil.
Let simmer for 20 minutes until the vegetables are tender without being soft.
Notes
Instead of celery, you can use 1 parsnip, parsley or 1 1/4 celeriac root.
There are plenty of opportunities to add more flavor and fillings. Just cut it into julienne and cook it along:
Additional Fillings
- cooked pasta from the day before. Just heat it up in the soup.
- noodles should cooked in for the last minutes (read the package for how long.)
- potato cubes, approx. 1 cm (½ inch).
- green beans.
- canned beans / chickpeas without liquid.
- peas
- corn
- cabbage / china cabbage / bok choy / iceberg lettuce (cabbage should be put in from the start, the other thinner kind of greens just has warmed up a few minutes.)
- herbs / spices
- thyme
- coriander
- a bit tarragon
- 2 cloves of garlic
- 1 thumb ginger
- 1 small chili
- grated zest / lemongrass into small cubes.
- meat
- Lightly fried bacon / black forest ham or bacon in julienne
- meatballs
- shrimp (just warmed up)
- tiger prawn (deshell and cook until the last minute or two. until they are just pink.)
