Cheese cake - An American cheesecake is made from real cream cheese, and in contrast to the "cheese cake" we usually eat in Denmark it is baked. It's not a cake I bake very often for only the family. It is a dense and heavy cake where a single piece or two generally is enough. So a whole cheesecake never gets eaten here. But it is a fantastic cake. Especially when there are guests to share with.

This is an exceptionally good and rich chocolate cake. Actually it is a classic pound cake where the flour has been replaced with chocolate. But the lack of flour only makes it seem richer.

Shortbread is a funny cookie. It is literally the most simple cake recipe there is! Only 3 ingredients. I do not think you can make a recipe more simple than that and then get something edible out of it, that can be called a cake. For me, this is the "Ground Zero" of the cakes. Where it all starts. All other cakes are variations of it. Well ok. That is perhaps not the entirely right, but it only takes 5 minutes to bake, and can be eaten with jam or other sweet spreads.

Video recipe - Gordon Ramsay is crazy about chocolate fondant. And it looks extremely sophisticated when you serve it. First it looks like a plain ordinary muffin, the when you cut it, hot delicious chocolate crème comes pouring out.
It is a bit amusing as it is really just chocolate poundcake that is not fully baked. So it is pretty easy to make, but can be a bit difficult to bake just right.

Video Recipe - My favorite recipe for muffins. Easy to make. They are large, moist and tasty.
In the past I did not eat muffins. I knew them only as small pieces of sponge cake with paper to be pulled off. Boring and tedious.
But when we go abroad, the family is thrilled to get into Starbucks and get cocoa and muffins. Their muffins are also large moist and tasty.
I then made this recipe inspired by them. And now the family will rather have "our own" muffins.

Video Recipe - A classic Italian cake, available in a wide variety of version. The main ingredients are the creamy mild mascarpone cheese that mostly taste like a heavy cream, and ladyfingers that are a bit similar to macaroons. I used to not bee very excited about it. Mostly because the ones I had tasted too much of coffee. So when I finally tasted one I liked (no actually, loved) the taste of, I made sure to get the recipe. I have never regretted this. Except sometimes when I'm out running:-s
A dessert you can easily make the day before serving. It actually becomes better after resting overnight.

Because you can not buy it in most places in the world. I have not been happy with the recipes I could find in the literature or online, so here is the one I have made. Pepper Nuts is a classic recipe with roots in the Middle Ages. With typical medieval spices. When a court has survived as long as it is not a coincidence. An unusually delicious and heavy cake / dessert. Basically it is a sponge cake with 3 kinds of chocolate mousse on. The order is pie bottom, white, light and dark mousse. Hard to do!
