This is a brown sauce on steroids. Apart from the fact that it takes 10 hours to prepare the stock, it takes almost as long to prepare the sauce finished afterwards. It is "the" classic brown sauce which is known from Escoffier's cookbooks. Restaurants use it rarely more because they found it too difficult. But I think it's all worth the effort. The best "brown sauce" I have tasted.

I'm not much for eggplant. It's like a dry and boring version of the cucumber. Which is already the world's most boring vegetable. But if the eggplant is cooked just right, it can be really delicious in both taste and texture. Eggplant puré is one of the "good" cooking methods. Here are two different versions from both the Mediterranean and Asia. With some variations on top.

Duck stock is not often used for anything but duck sauce. Duck soup is quite unusual :-) But duck sauce is a classic, so here is a stock that is very suitable for that. In denmark it is mostly eaten around christmas eve, but it really should be eaten all year round.

When I went to cooking class in public school, 6th grade I think, the most exciting dish we were allowed to make was osso buco. It really was pretty exotic to us. There were tomatoes in the sauce and there was also a garlic in it. And wine ... just how foreign could it be for a Nordic teenager. Even the term "teenager" was exotic and foreign to us, I should probably add. But Osso buco is one of those dishes that is as modern today as it was then in the 70s. So you know you it's a classic.

One of my favorite sausage recipes. It is actually good enough that you can serve it to guests, instead of the other kinds of "fine" meat. It is a dark and powerful tasting sausage.

Beef and veal prime rib is a beautiful piece of meat. The red marbled meat sitting on the cut ribs. It's not a cut we usually see at the butcher her in Denmark, but he can make it for you if you ask. Otherwise, go to the closest halal butcher, they will most likely have it. I usually roast it whole, and usually in my grill, where it will get a mild smoky taste of rosemary. The eyes lighting up around the table when the big piece of meat is served is worth it alone.

It is an unusual but underrated side dish here in Denmark. It is reminiscent of boiled rice, but is made from semolina, which in itself does not taste of much. This makes it suitable for adding all sorts of deliciousness. Personally I prefer it like this. It is served cold and is therefore very suitable for making in advance, and it can be served straight from the fridge.

I looove potato pancakes, but for many years I have found it difficult to be completely happy with the ones I made. Either they were burned on the outside, or they were raw on the inside. But I finally found a trick that was necessary for complete success. every time.

Fillet of beef is the same piece of meat you cut in slices for ribeye steaks. A tender and marbled piece of meat, with a lot of flavor. I slow roast it at a low temperature so that it becomes red all the way through and you can chew it with your eyebrows.

Veal shank is the same piece of meat that is used for Osso Buco, but a slow braising with a sweet port wine and a good stock puts that meat into a completely different class. It is also a dish that practically cannot fail. If you like meat that is so tender that it falls apart when eating, and has a dark strong beef flavor. Then this is just the ticket. The long list of ingredients can look somewhat daunting, but the basic principle is to just brown the meat and the vegetables, and then braise / let it simmer it in some wine.

Green potato salad is a good recipe if you are note able to make a gravy to go with your potatoes, or if it has to be quick meal. Oh yeah, it is also a good dish simply because it taste fantastic. You can also make it in as large portions as you have pots for cooking potatoes, and the potatoes can even be cooked the day before and put in the fridge, so it's great for parties. The recipe can be varied indefinitely depending on which seasoning and herbs you like.
