Sherbet
is the most simple ice creams to make. It takes literally 5-10 minutes of work if you prepare a little bit in advance. Of course you can make sherbet without an ice cream maker, but they are so much better with one, so I strongly recommend them. Especially the type with built in compressor/freezer.

Almond flour is useful in many recipes. Homemade marzipan, petit fours, French macaroons, pie bottoms, paleo cooking etc. It is a little time consuming, but simple enough to make with a blender or coffee grinder.

Whether you want to make bread, pancakes, smoothies, ice cream or anything else with it, or you just want to pour it on your cereal in the morning ... as I do. So it tastes of marzipan and milk. A danish classic. Very well suited for the smoked herring (kippers), shrimp or whatever you have in mind. We usually get it at Christmas, but it is not necessary to limit it to that season. It is suitable as a condiment for meats, in sandwiches and open sandwiches (smørrebrød) for all seasons.

It's easy to make your own yogurt, and it can be quite different from the yoghurt you can buy in the store. If you like yogurt, it's even fun to make your own. Cottage potatoes are raw potatoes that are cooked in a frying pan. It's a good way to fry 2-4 servings of potatoes. However, it is not a good way to cook large quantities of potatoes. If they lie in layers on the pan, then the upper potatoes are cooked, and the bottom ones are in high risk of burning.
There may be raw potatoes, hidden among the other ones and that can really make pan fried potatoes into a sad affair. Otherwise, you must use a really long frying time on large portions to be sure that all the potatoes are tender. At the risk of some getting burned. So here are my tips for making them.

I got them once somewhere in France I think. It was before the Internet and I did not have the recipe. But I liked them so much that I made a similar recipe. Bechamel sauce is a classic. One of Auguste Escoffiers "big" sauces. It is the most simple of the great sauces to make. In Denmark it is simply known as the white sauce, but it's basically the same. It is a basic recipe that can be used for everything from pasta to fish and as a base for other sauces. It can also be used as a base in onion sauce, cheese sauce (mornay), cream sauce, mushroom sauce, curry sauce (indienne), tomato sauce (aurore) and the Baltic Sauce.

A powerful and tasty pepper sauce. It has a beautiful rich color and can be used for almost all dishes where you would otherwise use tomato sauce. I have two versions of the same recipe here. The basic sauce is fine in itself and has a stronger pepper flavor. The creamy is more luxurious and delicious.

When I went to cooking class in public school, 6th grade I think, the most exciting dish we were allowed to make was osso buco. It really was pretty exotic to us. There were tomatoes in the sauce and there was also a garlic in it. And wine ... just how foreign could it be for a Nordic teenager. Even the term "teenager" was exotic and foreign to us, I should probably add. But Osso buco is one of those dishes that is as modern today as it was then in the 70s. So you know you it's a classic.

You can often buy hummus in supermarkets and specialty stores. Most of those I do not care much about. So I have bribed and begged my middle eastern friends for their recipes. From those I have made a humus that suits my taste. The recipe looks simple, but it took a LOT of experimentation to find the right balance.
