Video recipe - Some of the most difficult types of bread to bake are those made of laminated dough. Also called a viennese dough here in Denmark. Amusingly it is called "Danish pastry" in most of the rest of the world. The ultimate challenge is the croissant. It is very honest and has no filling, no remonce, no glaze or other things that can hide one's flaws. Recipe with video - Once in a while I felt the urge to make my own sodapop. I especially wanted to eksperiment with unusual flavours. Or try to make my own cola, using one of the recipes that are online. But that sodamachine has always stopped me. I simply don't drint enough fizzy drinks to buy one of those. Cottage potatoes are raw potatoes that are cooked in a frying pan. It's a good way to fry 2-4 servings of potatoes. However, it is not a good way to cook large quantities of potatoes. If they lie in layers on the pan, then the upper potatoes are cooked, and the bottom ones are in high risk of burning. There may be raw potatoes, hidden among the other ones and that can really make pan fried potatoes into a sad affair. Otherwise, you must use a really long frying time on large portions to be sure that all the potatoes are tender. At the risk of some getting burned. So here are my tips for making them.

It is a basic recipe that can be used for everything from pasta to fish and as a base for other sauces. It can also be used as a base in onion sauce, cheese sauce (mornay), cream sauce, mushroom sauce, curry sauce (indienne), tomato sauce (aurore) and the Baltic Sauce.

Video recipe - When beans sprouts it starts a lot og biological processes, that turns the hard and reather healthy beans into even healthier vegetables. Bean sprouts are good in salads and as a filler in soups or asian food. The sprouts you buy in the supermarket are often a bit bitter and has a taste of dirt. If you grow your own you can eat them before the taste turns dirt-like and bitter. They actually taste a lot more like fresh green peas.

Video recipe - Gordon Ramsay is crazy about chocolate fondant. And it looks extremely sophisticated when you serve it. First it looks like a plain ordinary muffin, the when you cut it, hot delicious chocolate crème comes pouring out. It is a bit amusing as it is really just chocolate poundcake that is not fully baked. So it is pretty easy to make, but can be a bit difficult to bake just right.

Video Recipe - My favorite recipe for muffins. Easy to make. They are large, moist and tasty. In the past I did not eat muffins. I knew them only as small pieces of sponge cake with paper to be pulled off. Boring and tedious. But when we go abroad, the family is thrilled to get into Starbucks and get cocoa and muffins. Their muffins are also large moist and tasty. I then made this recipe inspired by them. And now the family will rather have "our own" muffins.
