Can Danish pastry be frozen?

I have frozen the dough and after it has been shaped but before it is baked. Honestly it freezes beautifully after it is baked and it is so much easier. Also if you add up the weight of the dough finished it is about a 2 to 1 ratio.

The Nordic nut bread

Fantastic. Have made four of these now and am enjoying experimenting with the ingredients. Three carrots and the nuts ground a little is my favourite. The carrots keep it moist and yieldy. I tried cashews this week and the taste was superb. Thanks for the great recipe.

If you use oatmeal, then they are not Paleo. Make more sense to just make a regular wheat bun, if you do not want a Paleo bun.

Danish Rye Bread

Just finished making this tonight, actually still eating pieces hot from the oven. The recipe is perfect and the bread came out almost as the pictures, maybe a little fluffier as I let the secondary fermentation go overnight. It is absolutely delicious, sour, strong, chewy in the right way, a very fortifying bread. I am going to make several more loaves and take them for long hunting trips, also for sandwiches in the office! If I can make one suggestion for the recipe, add another couple of pinches of salt. A little more saltiness adds to the backend flavour and makes the overall taste really finish in the mouth. 9.5/10 though, a really great bread.

Almond Buns flour options

I have known that are some persons are allergic to almond in any type of presentation; what would you recommend as an option, to change the flour ingredient? could it be use a wheat flour?

Can Danish pastry be frozen?

It freezes VERY well. After the last folding just put it in the freezer. you are confusing flour with dough. There is eggs, milks etc. in the dough, so the dough ends up twice the weight of the flour.

Shelf life

HI George, since I make one loaf and cannot eat it in 4 days...I freeze than when I like to eat it, take out and toast. Delicious. Another thing I am doing after the baking (since my loaf is very humid), I dehidrate all slices and it is just perfect. Hope to have helped you. regards Ingrid

RE: BITTER ALMOND

That is too expensive in my experience. You normally don't use bitter almond for anything, so it is a bit of a waiste. Just use some almond extract instead. It is usually made from bitter almonds. I have not tried the oil so I cannot comment on that. It might work. - max

Best bread ever!

Mine seams to rise up then as it bakes the bread shrinks, when I cut into the bread about 12 hours later, its slightly sticky, is this normal, quite like it this way

I made these and they have a very nice texture, but I would call them egg buns-- egg is by far the dominant flavor. Mine are very yellow from the yolks as well. Thanks for the recipe.
