Can you freeze the marzipan?

Yes, you can freeze it, I make marzipan from a 48oz bag from Sam's, then I make 6oz rolls and wrap each in plastic wrap and put them all in a freezer bag. They are usually gone by 6 months, so I really don't know how long they last in the freezer. Jane

Rugbrod

I have been making this bread for a few months now. I love the taste and the fact that it is easy on my blood sugar. After following this recipe with a very active starter, The recipe worked very well with a surprising amount of raise in the dough. I am now making a loaf with a cup and a half of steel cut oats as I was low on cracked rye.

Nordic nut bread

I made this bread the other day. Wow, it was AMAZING! I did grind the flax seeds, only had 4 eggs so added a tablespoon of chia seeds soaked in 2 tablespoons of water, worked really well. Served it with fig paste and goats cheese, a big hit. I cut a few thin slices and baked in the oven to make my own version of biscotti, again, amazing. Thanks for sharing. Will definitely be making again and again :-)

Sugar by weight.

Now your recipe makes totally sense if talking in % because 300gr of almonds will be a little over 2c and 225gr a little bit bore than 1c of granulated sugar so it has 100% almonds with 50% sugar content. My last question is… In the video the syrup you added to the ground almonds seems very dense, almost like glucose or corn syrup so that means when I cook the syrup I have to let it reduce a lot? Do you know the temperature it has to reach before cooling down? Thx again!

Nordic nut bread

I'm just discovering this recipe, so I hope I don't lead you to disaster, but I also cannot have eggs. I've learned that grinding zucchini in the food processor is a great addition to ground meat for meatballs. I will use it in this recipe as well. BTW, I also add GF ground oats to my meatball recipe. That way I have a quick grab and go food handy, especially if I can't take my soup along. :)

Sauce darkener

Here are a couple of links that I know of for USA sellers of mad kulor (Danish gravy browning). Note that both links show photo the kavli brand but the Danish brand you get is Torsleff brand of mad Kulor. It works just fine. Don't know why can't find the Kavli brand in USA anymore. www.danishwindmill.com/productcart/pc/viewPrd.asp?id... www.nordichouse.com/detail.aspx?ID=50

Oven temp for No Knead Bread

I'm looking forward to trying your No Knead Bread recipe. However, I have an old oven that just barely reach 425 degrees. The bread tends to be get a very, very thick, hard crust. Until I get a new oven, do you have suggestions for baking this bread at a lower temperature?
