Apple Meringue

Apple meringue is stewed apple topped with a crisp meringue and baked — a warm dessert that is easy to make and looks impressive. Serve with whipped cream or raw cream.
Ingredients
- stewed apple made from 750 g apples
- 2 egg whites
- 1 dl + 1 tbsp sugar
To serve
- whipped cream (or raw cream)
Directions
Make the meringue topping
Make the stewed apple and pour it into an ovenproof dish. Preheat the oven to 390°F (200°C).
Whisk the egg whites until stiff. Add 2 tbsp sugar while continuing to whisk. Gently fold in the remaining sugar.
Bake
Spread the meringue over the stewed apple. Place the dish in the middle of the oven and bake for about 10 minutes, until the meringue is golden.
Serving
Serve immediately with whipped cream or raw cream.
Notes
- Can also be made with stewed apricots, stewed gooseberries, or unsweetened stewed rhubarb instead of stewed apple.
- The meringue topping needs a short bake at high heat — that way it becomes crisp on the outside and soft inside.
- The stewed apple can be prepared in advance and kept in the fridge, making the dish quick to assemble.
