Chocolate Cake

A simple, classic chocolate cake baked in a bundt tin and covered with chocolate icing. The basic recipe, as it has always been.
Ingredients
Cake
- 200 g flour
- 200 g sugar
- 150 g butter, softened
- 3 eggs
Icing
- 2 dl icing sugar, sifted
- 2 tbsp cocoa
- ½ egg white, to taste
Directions
Mix the batter
Preheat the oven to 350°F (175°C). Beat the butter and sugar together. Add the eggs one at a time. Fold in the flour.
Bake
Pour the batter into a greased bundt tin or ring tin. Bake on the bottom rack for 45–50 minutes.
Ice
Let the cake cool completely. Mix the icing sugar, cocoa, and egg white together into a thick, spreadable icing. Spread the icing over the cake.
Notes
- The cake is done when a skewer inserted into the centre comes out clean.
- The icing should be quite thick — add the egg white a little at a time.
- Can be frozen un-iced for up to 6 months.
- A tablespoon of instant coffee in the batter enhances the chocolate flavour.
