Hamburger patties baked with peas is a simple and quick oven dish made with thin slices of Danish cured smoked pork loin (hamburgerryg). The slices are briefly browned, then baked over peas in a dish with stock. Serve with steamed rice.
Ingredients
Makes 4 servings
- 600 g cured smoked pork loin (hamburgerryg)
- 20-30 g butter or margarine
- 1/4 tsp rosemary
- 1/2 kg frozen peas
- 1 clove garlic (optional)
- 1 dl stock

Method
Preparation
Preheat the oven to 365°F (185°C). Slice the pork loin thinly and pat the slices dry with kitchen paper. Sprinkle rosemary over the meat.
Browning
Melt the butter in a frying pan and quickly sear the slices for about 20 seconds on each side. Remove them from the pan immediately. Deglaze the pan with the stock.
Dish and oven
Spread the frozen peas in a well-greased ovenproof dish. Crush the garlic clove over them if using. Lay the slices between the peas. Pour the pan juices over. Cover the dish with a lid or foil. Bake in the middle of the oven at 365°F (185°C) for about 20 minutes.
Serve
Serve directly from the dish with steamed rice.
Notes
- The pork loin is already salted and smoked — do not add salt, only pepper if desired
- The peas thaw and cook directly in the dish — no pre-thawing needed
- The dish can be varied with green beans instead of peas
- Freezing: 1 month
