Parfait is a classic frozen dessert made from egg yolks, icing sugar, and whipped cream with vanilla. It freezes without an ice cream machine and is served in slices with fruit, chocolate, or nuts. Simple and elegant.
Ingredients
Yields 6 servings
- 4 egg yolks
- 4–5 tbsp icing sugar, sifted
- seeds from ½ vanilla pod
- 500 ml heavy cream
To serve
- fresh, frozen, or canned fruit
- grated chocolate, nuts, or chocolate sauce
Directions
Make the parfait
Split the vanilla pod and scrape out the seeds. Beat the egg yolks, icing sugar, and vanilla seeds until light and fluffy — a hand mixer works well here.
Whip the cream. Gently fold the whipped cream into the egg mixture.
Freeze
Pour the mixture into a loaf tin and cover with aluminum foil. Freeze in the freezer compartment for 4–5 hours, or in a deep freezer for 2–3 hours.
Serving
Run the tin briefly under cold water. Loosen the parfait along the edges and turn it out onto a serving plate. Slice and serve with fruit, grated chocolate, nuts, or chocolate sauce.
Notes
- The parfait can be flavored with coffee, cocoa, liqueur, or berry puree for variations.
- Line the tin with plastic wrap for easier removal.
- Keeps in the freezer for up to 2 weeks — after that it starts to lose its lightness.
- Take the parfait out 5–10 minutes before serving so it slices more easily.
