Raacreme (Danish Raw Cream)

Raacreme is a classic Danish dessert cream made from egg yolks, powdered sugar, and vanilla folded into whipped cream. Served alongside apple meringue, fruit porridge, or cake. Very simple and elegant.
Ingredients
Yields 4 servings
- 2 egg yolks
- 1-2 tbsp powdered sugar
- seeds from ½ vanilla pod
- 200 ml heavy cream
Directions
Make the raacreme
Whisk the egg yolks, powdered sugar, and vanilla seeds until light and fluffy.
Whip the cream. Fold it into the egg mixture just before serving.
Serving
Serve immediately as an accompaniment to warm desserts, fruit porridge, or cake.
Notes
- The raacreme should be made right before serving — it doesn’t hold its shape for long.
- The vanilla pod can be replaced with ½ tsp vanilla extract.
- Can be used as a base for parfait by freezing the mixture instead of serving it fresh.
