Ymer Fromage

Ymer fromage is a light Danish dessert made from ymer set with gelatine, flavoured with orange zest and sugar, and folded together with whipped cream. Served cold with whipped cream rosettes and grapes.
Ingredients
Yields 4 servings
- 5 sheets gelatine
- 500 ml ymer
- 2–3 tbsp sugar
- grated zest of ½ orange
- 250 ml heavy cream
To garnish
- whipped cream
- blue grapes
Directions
Make the fromage
Soak the gelatine sheets in cold water. Mix the ymer with the sugar and grated orange zest.
Melt the gelatine and let it cool slightly. Pour it into the ymer while stirring constantly. Refrigerate the fromage until it is half-set.
Fold in the cream
Whip the cream. Stir the fromage to loosen it, then fold in the whipped cream with a rubber spatula. Pour the fromage into a serving bowl and refrigerate.
Serving
Garnish with whipped cream rosettes and blue grapes.
Notes
- Can also be served with thawed or tinned fruit instead of grapes.
- Can be frozen for 2–3 months.
- The fromage must be half-set before folding in the cream — otherwise the cream will sink to the bottom.
