Apple and Bacon (Æbleflæsk)

Recipe with video — the most underrated favourite at the Christmas dinner table. Or maybe that’s just me, but I look forward to it every single Christmas. Who doesn’t like apple jam with bacon in it, though?
Ingredients
- 1 kg apples
- 400 g bacon, diced
- 150–200 g sugar (or a little less)
Directions
Peel the apples, remove the cores and cut the apples into wedges.
Fry the bacon until completely crisp. Pour off the bacon and most of the fat.
Fry the apples in enough fat. If there isn’t enough fat, add more.
When the apples are soft, break them up into smaller pieces with a palette knife.
Add the sugar.
When the apples have turned brown, fold in the bacon pieces and let everything simmer for a minute or two until the dish is done.
Notes
You can chop the apples before putting them in the pan. This is especially useful if you’re using a plastic palette knife and a non-stick pan.
The dish is not very sensitive to the amounts of each ingredient. So the loose recipe is: “a pan full of peeled apples, enough bacon to cover the bottom of the pan, and enough sugar to cover the apples.”
If your apples are not particularly tart and taste a bit flat, adjust with a small amount (1 tsp) of apple cider vinegar.
