Apple Cake with Crispy Breadcrumbs

Recipe with video — Apple compote is great on its own. But it can easily be upgraded with some caramelised breadcrumbs and a little whipped cream. Just a touch. That gives you the classic Danish apple cake that every child loves.
Ingredients
- 1 portion apple compote
- 2 dl breadcrumbs
- 1 dl sugar
- 100 g butter
- ½ l whipping cream
Directions
Melt the butter in a frying pan over medium heat.
Fry the breadcrumbs and sugar until golden. Be careful not to let the sugar burn. Stir well with a palette knife.
Tip the breadcrumbs out onto a table or into a roasting tin lined with baking paper. Chop through them a little as they cool. Otherwise they set into one large hard lump that is impossible to chew.
Layer the breadcrumbs first, then the apple compote in a bowl.
Whip the cream and cover the cake.
Notes
When making apple compote for apple cake you can use slightly less sugar in the compote itself. The crispy topping is quite sweet on its own.
It is best assembled in a bowl or glass just before serving. Otherwise the crunch goes soft — and there is no crunch if it does not crunch.
