Classic Sand Cake

Classic sand cake — the simplest Danish loaf cake made from flour, sugar, butter and eggs in equal parts. Four ingredients, no spices, no decoration. The basic recipe in its purest form.
Ingredients
Yields 1 loaf
- 200 g flour
- 200 g sugar
- 1 tsp vanilla sugar
- 200 g butter, softened
- 4 eggs
Directions
Mix the cake
Preheat the oven to 350°F (175°C). Beat together the butter and sugar. Add the eggs one at a time, mixing well after each. Fold in the flour and vanilla sugar.
Bake
Pour the batter into a greased loaf tin (1½ litre / 6 cup). Bake on the bottom rack for about 1 hour.
Serving
Leave the cake to cool in the tin for 10 minutes, turn it out and let it cool completely.
Notes
- Sand cake is the base for countless variations — add lemon, chocolate, almonds or berries.
- The cake should bake slowly at moderate heat — too high a temperature gives a dry crumb.
- Can be frozen for 4–6 months.
- It is best after a day — the flavour develops as the cake rests.
