Colorful everyday pot is an easy one-pot dish with ground pork, rice, and vegetables cooked in tomato sauce. Everything is made in the same pot — the rice absorbs the sauce and becomes full of flavor. Bell pepper, peas, and corn are added at the end to keep their color and bite. Serve straight from the pot.
Ingredients
Serves 4
- 1 tbsp oil
- 1 onion, finely chopped
- 1-2 cloves garlic, crushed
- 500 g ground pork
- 3 dl long-grain rice
- 1 can chopped tomatoes (approx. 400 g)
- 7-8 dl stock
- 1/2 tsp dried marjoram
- salt, pepper
- 1 red or yellow bell pepper, cut into strips
- 1 dl frozen peas
- 1 dl corn (from a can)
Method
Brown the meat and rice
Heat the oil in a wide, heavy-bottomed pot. Brown the ground pork over high heat — spread it out and let it get color. Add the onion and garlic and stir until translucent. Add the raw rice and stir for 1 minute so it absorbs some of the fat.
Cook
Add the chopped tomatoes and stock. Stir well. Season with marjoram, salt, and pepper. Bring to a boil and put the lid on. Reduce to low heat and let the dish cook for 12–15 minutes. Check halfway through: add a little more stock if the pot looks dry.
Vegetables and serve
Stir in the bell pepper, peas, and corn during the last 3–4 minutes. Adjust seasoning with salt and pepper and serve straight from the pot.
Notes
- 7–8 dl stock is the right amount for 3 dl rice with the lid on — too little gives burnt rice, too much gives soup
- Marjoram is the characteristic spice; thyme can be used as a substitute but gives a slightly different flavor
- The vegetables are added at the end to preserve their color and texture
- Cheese variation: sprinkle grated cheese over the finished dish and let it melt under the lid for 2–3 minutes
