A lighter Vietnamese dressing designed for salads and vegetables. It has the same sweet-sour-salty-spicy balance as many Vietnamese dipping sauces, but the fish sauce and chilli-garlic are dialled back so they don’t overpower fresh greens.
Ingredients
- 1 tbsp lime juice
- 1 tbsp white sugar
- 1 tsp fish sauce
- 1 tsp mild red chilli and garlic, pounded
Directions
- Combine the lime juice and white sugar in a small bowl. Stir until the sugar dissolves.
- Add the fish sauce and the pounded chilli and garlic. Mix well.
Notes
- Compare this to the dressing for boiled meats - same idea, but lighter on the fish sauce and chilli.
- Toss with shredded vegetables or drizzle over a green salad just before serving.
