Fish Marinade

A Vietnamese aromatic paste for marinating fish before grilling or pan-frying. The combination of ginger, galangal, lemongrass, turmeric, and chilli is a classic Vietnamese flavour profile for seafood.
Ingredients
- Ginger
- Galangal
- Lemongrass
- Turmeric
- Chilli
- Oil
Directions
- Pound or finely chop the ginger, galangal, lemongrass, turmeric, and chilli together into a rough paste.
- Mix the paste with enough oil to make it spreadable.
- Rub the marinade over the fish and let it sit for at least 30 minutes before cooking.
Notes
- Adjust proportions to taste - more turmeric for colour, more chilli for heat.
- Works well on whole fish, fillets, or fish steaks for grilling.
