Homemade Apple Sauce

Recipe with video - A true autumn classic: apple sauce. Nothing but good apples, vanilla and a little sugar.
Ingredients
- 1.5 kg tart apples
- 200 g sugar (2 dl)
- 1 dl water
- 1 vanilla pod (or 1 tsp homemade vanilla sugar)
Instructions
Peel the apples and cut them into small pieces.
Scrape the seeds from the vanilla pod. Save the pod for homemade vanilla sugar.
Put everything in a pot and let it simmer for about 30 minutes with the lid on until the apples are soft.
Cool and serve cold with milk or cream.
Notes
You must use relatively firm, tart apples. Otherwise it ends up flat in flavour. So you need some of the thicker-skinned varieties here.
Ideally Danish apples that have ripened fully on the branch.
200 grams of sugar depends a lot on how sweet the apples are. Add half first, then taste to see if more is needed.
