Layer cake bases are another variation of pound cake, except there’s no fat in them. You could almost call them healthy :-S
Ingredients
Yields 3 bases
- 200 g sugar
- 200 g flour
- 4 eggs, separated into yolks and whites
- 1 tbsp cocoa (for chocolate bases only)
- 1 tsp milk (for chocolate bases only)
Directions
Beat the egg whites until stiff, gradually adding the sugar as you go.
Mix the cocoa and milk into the egg yolks. (for chocolate bases only)
Fold the egg yolks into the whites.
Fold the flour into the egg mixture.
Pour into a well-greased 8-inch (20 cm) springform pan.
Bake for 30–40 minutes at 390°F (200°C).
Let it cool, then slice it into 3 layers using a bread knife.
Notes
Alternatively, you can divide the batter into three portions, spread each one onto baking paper separately, and bake them for about 10–15 minutes instead. This more closely resembles the store-bought bases you find in shops.
