Sponge layers are a pound cake variation — just without the fat. You could almost call them healthy.
Ingredients
Yields 3 layers
- 200 g sugar
- 200 g flour
- 4 egg yolks
- 4 egg whites
- 1 tbsp cocoa (for chocolate layers only)
- 1 tsp milk (for chocolate layers only)
Directions
Beat the egg whites to stiff peaks while slowly adding the sugar.
Stir the cocoa and milk into the egg yolks. (For chocolate layers only.)
Fold the egg yolks into the whites.
Fold in the flour.
Pour into a well-greased 20 cm (8 inch) springform tin.
Bake for 30–40 minutes at 390°F (200°C).
Let it cool, then cut into 3 even slices using a bread knife.
Notes
Alternatively, divide the batter into three equal portions, spread each onto a separate sheet of baking paper, and bake for about 10–15 minutes. This gives layers that look more like the ones you buy in shops.
