Recipe with video - A sudden snack attack is one of the worst things. You have nothing in the house but you really want — no, need — something good. Poor knights are the perfect solution. They only use ingredients most people have on hand and take five minutes to make.
Ingredients
- 1 tsp cinnamon
- 1 tbsp sugar
- 25 g butter
- 2 slices white bread
Directions
Turn on the oven grill (broiler). Leave the oven door open or ajar.
Mix the sugar, cinnamon and butter together into a paste. It is easiest if the butter is soft to begin with.
Spread the paste onto the bread and place it under the grill. Keep a distance of about 5–10 cm (2–4 inches) from the element.
The further away the bread is from the grill, the more evenly it browns and the less risk of burnt patches — but it takes longer.
Give it about 5 minutes. When the topping is bubbling evenly across the whole slice and the edges of the bread are golden, it is done.
If it starts to smoke, take it out immediately.
Once cooled, the sugar should form a hard crust. That is how you know they are perfect.
Notes
You can get away with ½ tsp of cinnamon.
Do not just sprinkle the cinnamon sugar on top of the butter. It will not stick properly and the flavour will not be as good.
