Raspberry chops (Hindbærsnitter)

Recipe with video - A classic in Danish bakeries. They just don’t make it with butter, which is a shame!
Ingredients
- 450 g raspberry jam (1 portion of this recipe)
- 500 g shortcrust pastry (2 portions of this recipe)
Icing
- 100 g icing sugar
- 1/4 dl water
Directions
Divide the dough into two equal parts.
Roll one part flat. Try to make it as square as possible.
Roll it up on a rolling pin so you can move it, then roll it out onto a baking sheet.
Poke it with a fork so it doesn’t puff up.
Cover the dough generously with jam, all the way to the edges.
Roll the second part flat. Make sure it is the same size and shape as the first sheet of dough.
Place it on top of the jam.
Bake for approx. 25 minutes at 390°F (200°C). Until golden.
When cooled, cover with icing.
Cut into squares. It is easiest with a pizza wheel.
