Smørrebrød Madam Schønnemann with Ox Tongue and Chicken Salad

Madam Schønnemann is a named smørrebrød after the legendary smørrebrød restaurant in Copenhagen. It consists of cooked salted ox tongue, chicken salad and cress. It takes a bit of preparation but makes an impressive and good-tasting open sandwich.

Ingredients
Yields 4 servings
Chicken salad
- 300 g cooked chicken breast, diced
- 3 tbsp mayonnaise
- 1 tbsp crème fraîche 18%
- 1 tsp Dijon mustard
- 2 celery stalks, finely chopped
- salt
- white pepper
Assembly
- 4 slices rye bread
- butter, for the bread
- 200 g cooked salted ox tongue, thinly sliced
- 1 punnet cress
- salt
- pepper
Directions
Chicken salad
Mix the mayonnaise, crème fraîche and Dijon mustard in a bowl. Fold in the diced chicken and celery and season with salt and white pepper. Refrigerate.
Assembly
Butter the rye bread with butter. Lay the thin slices of ox tongue over it in an even layer. Spread the chicken salad on top in a rounded mound. Snip cress over the top and season with salt and pepper.
