Snaps bread is the classic accompaniment to aquavit at the lunch table. New potatoes with marinated herring, onion cream and dill — simple and well-tested. Use the first new potatoes of the season and a good, well-spiced marinated herring. It is not the aquavit that accompanies the food, but the other way around.

Ingredients
Yields 4 servings
Onion cream
- 1 onion, finely chopped
- 3 tbsp crème fraîche 18%
- 1 tsp sugar
- 1 tsp white wine vinegar
- salt
Assembly
- 4 slices rye bread
- butter, for the bread
- 8 new potatoes, cooked and sliced
- 4 pieces marinated herring
- 1 bunch fresh dill
- salt
- pepper
Directions
Onion cream
Mix the onion, crème fraîche, sugar and vinegar together. Season with salt and leave the cream to rest for 10 minutes so the flavour develops.
Assembly
Butter the rye bread. Spread the onion cream on the slices. Lay the potato slices on top and place the herring pieces alongside. Scatter plenty of fresh dill over and season with salt and pepper.
