Smørrebrød with Cheese, Gravy and Radishes

Cheese with gravy is one of the most traditional Danish smørrebrød and has featured on lunch menus for generations. The cheese — typically a semi-firm Danish variety like Havarti, Samsø or Danbo — is placed in thin slices on buttered rye bread, with cubes of set gravy on top. Gravy is the solidified dripping from a roast, and it adds umami and salty depth to the mild cheese. Radishes give crunch and freshness, and cress tops it with a peppery bite. It’s a smørrebrød that shows simplicity is often enough.

To serve
- 4 slices dark rye bread
- butter, for the bread
- 150 g Danish cheese (e.g. Havarti, Samsø or Danbo), sliced
- gravy (see recipe #36), cut into cubes
- 6 radishes, thinly sliced
- cress
- coarsely ground black pepper

To serve
Spread the bread with butter. Lay slices of cheese in a layer. Distribute gravy cubes on top. Add radish slices. Garnish with cress and pepper.
