Smørrebrød with Cheese, Jam and Fresh Fruit

Cheese with jam is traditionally the last piece of bread at a Danish lunch table — the transition from savoury to sweet before you leave the table. It’s served on white bread rather than rye, which gives a softer, milder base for the mild Havarti and the sweet jam. The combination of cheese and fruit is ancient, and it’s all about the balance between salt, fat and sweetness. Homemade strawberry jam with a little lemon juice has a freshness that shop-bought versions rarely match, but any good jam will do.

Ingredients
Yields 4 servings
Homemade strawberry jam (optional)
- 250 g strawberries
- 150 g sugar
- ½ lemon, juice of
To serve
- 4 slices white bread
- butter, for the bread
- 150 g Danish cheese (mild, e.g. Havarti)
- 4 tbsp fruit jam (strawberry, raspberry or elderberry)
- fresh fruit in season (grapes, strawberries, pear slices)
Directions
Homemade jam
Bring the strawberries, sugar and lemon juice to the boil. Simmer for 15–20 minutes until thickened. Leave to cool.
To serve
Spread the bread with butter. Lay slices of cheese on top. Place a spoonful of jam next to the cheese. Garnish with fresh fruit.
