Danish Meat Sausage with Remoulade and Fried Onions

Danish meat sausage (kødpølse) with remoulade and fried onions is a well-loved combination. Homemade remoulade with pickled cucumber, capers and curry is better than the kind from a jar. Crispy fried onions add crunch.

Ingredients
Yields 4 servings
Rye bread
- 4 slices rye bread
- soft butter, for spreading
Topping
- 400 g Danish meat sausage (kødpølse), sliced
Remoulade
- 4 tbsp mayonnaise
- 1 tbsp crème fraîche 18%
- 2 tbsp finely chopped pickled cucumber
- 1 tbsp capers, roughly chopped
- ½ tsp mild curry powder
- 1 tsp white wine vinegar
- salt
Fried onions
- 2 onions, cut into thin rings
- 3 tbsp flour
- oil, for frying
- salt
Assembly
- fresh chives, finely snipped
- flaky salt
Directions
Remoulade
Stir together mayo and crème fraîche. Add cucumber, capers, curry and vinegar. Season with salt. Leave to rest 15 minutes in the fridge.
Fried onions
Toss the onion rings in flour and fry in hot oil at 345°F (175°C) until golden and crispy. Drain on paper and sprinkle with salt.
Assembly
Spread the rye bread with soft butter. Lay the sausage slices on the bread. Spread remoulade generously over. Top with fried onions and sprinkle with chives and flaky salt.
