Smørrebrød with Goat Cheese, Honey and Rosemary

Goat cheese with honey is a combination that works for the same reason as cheese and jam — sweetness and acidity against something creamy and salty. Fresh rosemary cuts through the sweetness and keeps it from becoming cloying. Use a firm goat cheese that can be sliced, not a soft variety.

- 4 slices rye bread
- butter, for the rye bread
- 200 g firm goat cheese, sliced
- 4 tsp liquid honey
- 2 sprigs fresh rosemary, leaves picked
- 40 g walnuts, roughly chopped
- freshly ground black pepper

Butter the rye bread. Lay the goat cheese on in a single layer. Scatter the roughly chopped walnuts over and drizzle the honey evenly across. Scatter rosemary leaves over and finish with freshly ground black pepper. Serve immediately.
