Smørrebrød with Ham, Cottage Cheese and Wild Garlic

A spring open sandwich that works well when wild garlic is in season from March to May. Wild garlic tastes like a mild garlic and goes well with the soft cottage cheese and the salty ham. Use fresh wild garlic — dried does not work here.

Ingredients
Yields 4 servings
Cottage cheese cream with wild garlic
- 200 g cottage cheese
- 3 tbsp finely chopped wild garlic
- 1 tbsp lemon juice
- salt
- pepper
Pickled red onions
- 1 red onion
- 1 dl red wine vinegar
- 1 dl water
- 1 tbsp sugar
- 1 tsp salt
Assembly
- 4 slices rye bread
- 8 slices cooked ham
- butter, for the bread
Directions
Pickled red onions
Slice the onion into thin rings. Heat the vinegar, water, sugar and salt until the sugar dissolves. Pour the brine over the onions and leave to pickle for at least 20 minutes.
Cottage cheese cream with wild garlic
Mix the cottage cheese, chopped wild garlic and lemon juice together. Season with salt and pepper.
Assembly
Butter the bread and lay the ham on top. Spread a good spoonful of wild garlic cream over the ham and top with the pickled red onions.
