Smørrebrød with Ham Salad and Cottage Cheese

Homemade ham salad is quick to put together and better than shop-bought. Cottage cheese beaten with fresh horseradish gives a light, slightly sharp creamy base. Use good cooked ham — not thin deli slices, but a proper thick cut from the butcher with some texture to it.

Ingredients
Yields 4 servings
Ham salad
- 300 g cooked ham, cut into cubes
- 150 g cottage cheese
- 1 tbsp freshly grated horseradish
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- salt
- white pepper
Assembly
- 4 slices rye bread
- butter, for the bread
- 1 bunch chives, finely chopped
- paprika, a little
- salt
- pepper
Directions
Ham salad
Mix the cottage cheese, freshly grated horseradish, mayonnaise and Dijon mustard in a bowl. Fold in the ham cubes and season with salt and white pepper. Refrigerate for at least 15 minutes.
Assembly
Butter the rye bread. Spread the ham salad on the slices. Scatter plenty of chives over the top and finish with a light dusting of paprika, salt and pepper.
