Smørrebrød with Hamburgerryg, Cottage Cheese and Horseradish

Hamburgerryg is smoked pork loin with a firm, slightly sweet flavour. Cottage cheese and freshly grated horseradish give a fresh contrast, and apple sauce adds a little acidity. A simple combination that does not require much preparation.

Ingredients
Yields 4 servings
Apple sauce
- 3 cooking apples
- 2 tbsp water
- 1 tbsp sugar
- 1 tsp lemon juice
To serve
- 4 slices rye bread
- 12 slices hamburgerryg
- 200 g cottage cheese
- 2 tbsp freshly grated horseradish
- butter, for the bread
Directions
Apple sauce
Peel the apples and cut them into pieces. Put them in a saucepan with the water and sugar and simmer over low heat for 10–15 minutes until tender. Mash with a fork and season with lemon juice. Leave the sauce to cool.
To serve
Stir together the cottage cheese and freshly grated horseradish and season with salt. Butter the bread and arrange the hamburgerryg slices on top. Add a spoonful of the cottage cheese mixture and a spoonful of apple sauce side by side on top.
