Smørrebrød with Homemade Ham Salad, Asparagus and Tarragon

Ham salad is a Danish classic that most people know from the deli counter, but homemade it is in a different league. Here it is made with cooked ham cut into proper chunks, white asparagus and fresh tarragon, which gives an anise-like note that lifts the salad from something ordinary to something worth making. The mayonnaise and crème fraîche bind it together into a creamy salad with texture from the cornichons. It is a smørrebrød that works for Sunday as much as a lunch meeting, and it takes under 15 minutes to make from scratch.

Ingredients
Yields 4 servings
Ham salad
- 200 g cooked ham, cut into chunks
- 4 white asparagus (tinned or cooked), cut into pieces
- 50 g peas
- 2 cornichons, finely chopped
- 3 tbsp mayonnaise
- 2 tbsp crème fraîche
- 1 tbsp finely chopped tarragon
- 1 tsp Dijon mustard
- salt
- white pepper
To serve
- 4 slices dark rye bread
- butter, for the bread
- salad leaves
- chervil
- coarsely ground black pepper
Directions
Ham salad
Mix together the ham, asparagus, peas and cornichons with the mayo, crème fraîche, tarragon and mustard. Season. Leave to rest for 15 minutes.
To serve
Butter the rye bread. Place a salad leaf on top. Spread the ham salad generously. Garnish with chervil and pepper.
