Smørrebrød with Parma Ham, Pesto and Mustard Mayo

Parma ham is air-dried and salty with a soft texture that suits rye bread. Basil pesto and mustard mayo add richness and acidity. It’s not traditionally Danish, but it works well as a rye bread topping.

Ingredients
Yields 4 servings
Mustard mayo
- 3 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
To serve
- 4 slices rye bread
- 8 slices Parma ham
- 4 tsp green basil pesto
- butter, for the bread
Directions
Mustard mayo
Stir the mayonnaise, Dijon mustard and lemon juice together. Season with salt and pepper. Chill until needed.
To serve
Spread the bread with butter. Spread the mustard mayo over the bread and lay the Parma ham on top in loose folds. Add a teaspoon of pesto on top.
