Smørrebrød with Smiling Eggs, Anchovies and Capers

Smiling eggs are halved hard-boiled eggs with the yolk facing up — they look like a smiley face. Here they are topped with anchovy fillets, capers and chives. A salty, punchy smørrebrød that needs good rye bread as its base.

Ingredients

- 4 slices rye bread
- 4 eggs
- 8 anchovy fillets in oil
- 2 tbsp capers
- 2 tbsp freshly chopped chives
- butter, for the bread
- pepper
Directions
Hard-boiled eggs
Boil the eggs for 9 minutes from when the water comes to the boil. Cool in cold water and peel. Halve them lengthways so the yolk faces up.
Assembly
Butter the bread and place two egg halves yolk-side up on each slice. Lay an anchovy fillet across each egg. Scatter the capers over and sprinkle with chives. Grind a little black pepper over the top. The smørrebrød is already salty from the anchovies and capers — do not add extra salt.
