Strawberry Porridge

Strawberry porridge is a simple Danish berry porridge made from cooked strawberries thickened with cornstarch. Served cold with milk or cream. Can be made with fresh or frozen berries.
Ingredients
- 750 g strawberries, fresh or frozen
- 1½ dl water or rhubarb juice
- 4-6 tbsp sugar
- 3 tbsp cornstarch
Directions
Cook the porridge
Rinse and hull the berries. Cook them tender in the water for 2-3 minutes. Adjust sweetness with sugar.
Stir the cornstarch into 2 tbsp cold water. Pour the slurry into the porridge while stirring. Cook for 1 minute.
Serving
Let the porridge cool and serve cold with milk or cream.
Notes
- Rhubarb juice instead of water gives a more complex flavor.
- Frozen strawberries work just as well as fresh.
- Sprinkle a little sugar over the porridge while it is still warm to prevent a skin from forming.
- Can be used as a filling in apple meringue or as a topping for pancakes.
