Swedish sausage dish is a Danish everyday recipe from grandma’s era — despite the name, it is not something you would recognise in Sweden. Sliced grilling sausages, onion, and pre-cooked potatoes are simmered in a mild tomato sauce with paprika and chives. It comes together quickly and is properly filling.
Ingredients
Yields 4 servings
- 2 dl finely chopped onion (about 2 onions)
- 20 g butter
- 300–400 g grilling sausages, sliced
- ½–1 tsp mild paprika
- ½ kg cooked, cold boiled potatoes, sliced
- 1½–3 dl skimmed milk (or semi-skimmed milk)
- ½–2 tsp concentrated tomato paste
- 1 bunch chives, snipped
- salt
- pepper
Directions
Cooking
Melt the butter in a heavy-bottomed pan over medium heat. Sweat the onions until soft and translucent — they should not colour. Add the sausage slices and cook briefly with the onions. Sprinkle over the paprika and stir to combine.
Assembly
Add the potato slices, tomato paste, and milk. Stir gently — the potatoes should hold their shape. Let the dish simmer over low heat for 5–8 minutes until the sauce is creamy and everything is heated through. Season with salt and pepper.
Serving
Scatter plenty of chives over the top and serve directly from the pan.
Notes
- The onions are sweated until soft, not brown — the mild, sweet flavour is characteristic of this dish
- The potatoes must be pre-cooked and cold; raw potatoes will not become tender in the short simmering time
- Tomato paste is added sparingly — too much gives a heavy, sour sauce
- A splash of apple cider vinegar at the end balances and lifts the flavour
- Adjust the amount of milk to get the consistency you want: more milk gives a loose sauce, less gives a thick and creamy one
