Lingonberry Jam with Grey Pears

Lingonberries and grey pears are a classic Danish combination. The tart, slightly bitter flavour of the lingonberries is balanced by the sweet, soft pears. It is traditionally served as an accompaniment to game and hearty meat dishes, but also works well with porridge and cheese.
Ingredients
Yields 4–5 jars
- 1 kg lingonberries
- 500 g grey pears
- 3 dl water
- 6 dl sugar, to taste
Directions
Preparation
Rinse the lingonberries. Peel the pears, halve them, and remove the blossom end and core. Cut the pears into wedges.
Cooking
Bring the lingonberries and pear wedges to a boil with the water. Add the sugar and stir until dissolved.
Finishing
Simmer the jam over low heat for 10–15 minutes, until it thickens. Skim the surface and pour the jam into clean, scalded jars. Seal immediately.
Notes
- No preservative liquid in the original recipe — store in a cool place and use within 3–4 months.
- A classic accompaniment to game, duck, and robust meat roasts.
- Grey pears are an old Danish variety — Conference or Clara Frijs can be used as a substitute.
- Lingonberries are in season from August to October; frozen berries work fine out of season.
