A homemade mayonnaise for the Swedish shrimp sandwich. The classic rakmacka uses plain mayonnaise as a spread, with fresh dill sprigs and a lemon wedge as garnish – not mixed into the sauce.
Ingredients
- 2 egg yolks, room temperature
- 1 tsp Dijon mustard
- 250 ml rapeseed oil (or neutral oil)
- 1 tsp lemon juice (or white vinegar)
- 1/2 tsp salt
- black pepper, freshly ground
Directions
Place egg yolks and mustard in a bowl. Whisk until combined. Add oil very slowly – first drop by drop, then in a thin, steady stream – whisking constantly. The mixture should thicken into a stable emulsion.
Once all oil is incorporated, stir in lemon juice, salt, and pepper. If too thick, thin with a few drops of lukewarm water.
Spread on the assembled sandwich. Garnish with fresh dill sprigs and a lemon wedge.
Notes
Makes ca. 250 ml (4 sandwiches).
Rapeseed oil gives a milder flavor than olive oil and is traditional in Swedish cooking.
