A creamy, slightly spicy dressing that combines coconut cream with chilli jam and lime. It works well on salads, grilled seafood, or fresh rice paper rolls. The coconut cream gives it body, the lime cuts through the richness, and the chilli jam adds a sweet heat.
Ingredients
- 4 tbsp coconut cream
- 3 tsp lime juice
- 1 tsp sugar
- 1 tsp chilli jam
- 1 tsp fish sauce (optional)
Directions
- Combine the coconut cream, lime juice, sugar, chilli jam, and fish sauce (if using) in a small bowl. Stir until the sugar dissolves and everything is evenly mixed.
Notes
- The fish sauce adds saltiness and depth - worth including if you have it.
- Works especially well with grilled prawns or a green papaya salad.
