Creamy Pork Tenderloin with Mushrooms

Recipe with video - Pork tenderloin is actually tender, fine meat that you would normally season and cook to a rosy pink. It is a bit funny then that the most popular way to eat it is after it has simmered in a cream sauce. With plenty of mushrooms. Usually button mushrooms. But there is nothing funny about the flavor. It is excellent. So it is easy to understand why this dish is one of most people’s favorite meals.
Ingredients
butter and oil for frying
- ½ leek (optional)
- 250-500 g button mushrooms
- 1 pork tenderloin
- 1 large onion
sauce
- 1 tsp paprika
- ½ l cream
- 1 tbsp flour
- 1 tbsp good ketchup (optional)
- 1 tbsp soy sauce (optional)
Method
Clean the mushrooms and cut them into equal-sized pieces.
Slice the leek and rinse the slices well to remove any soil.
Peel the onion and cut it into rings or rough chunks.
Trim the pork tenderloin of sinew and membrane. Cut it into slices about ½ cm thick.
Fry the onion and leek until translucent and lightly golden. They should not turn black. Set aside.
Fry the mushrooms until nicely golden. Set aside.
Fry the tenderloin slices until golden. Use a hot pan so they do not need to cook too long. Set aside.
Toast the paprika briefly in the pan.
Add the soy sauce and ketchup. Let it reduce and brown slightly. This adds a bit more flavor.
Mix the flour into the cream and stir until smooth. Pour it into the pan and bring to a boil.
Add everything back into the cream sauce and let it simmer until the accompaniments are ready. Up to ½ hour.
Notes
Each mushroom piece should be roughly teaspoon-sized. Small mushrooms just need to be halved. Very small ones can be left whole.
This gives a good surface area for browning. Slicing them tends to make them release their moisture too quickly, so the pan gets wet and they steam instead of fry.
Browning the mushrooms properly adds a lot of flavor, and requires a very hot pan.
Ketchup and soy are not typical in the recipe, but they add a little extra flavor. Use a good ketchup.
