French Peas with Glace

French peas are a simple and very tasty side dish. Add a stock and reduce it down and they get even better. Rich in flavor and a perfect accompaniment — but also a dish in its own right. So to speak.
Ingredients — standard recipe

400 g (14 oz) peas

200 g (7 oz) bacon

50 g (1¾ oz) butter (only if using dried bacon or ham instead of bacon)

150 g (5 oz) onion (1 large or 2 small)

glace (optional)

4 dl (1⅔ cups) stock
Method — standard recipe
If you are using dried bacon or ham, melt the butter first. Otherwise just fry the bacon.
When the bacon starts to crisp up, add the onions and fry them until translucent.
Add the stock. Let it reduce over fairly high heat until slightly syrupy.
Add the peas. Let them simmer until tender. 2–5 minutes.

Notes
If you use dried bacon or Black Forest ham, as I do in the photos, only use 100 g (3½ oz). And use 50 g (1¾ oz) butter, as I also do in the photos.
I am making half a portion in the photos, by the way.
Can be served with any kind of meat.
French peas are normally made without stock/glace, but it really lifts them. So just make them without stock on weekdays and with stock when you have guests.
