A light Vietnamese dressing with fresh ginger as the main flavour. The pounded ginger gives it a sharp, warm bite that works well with poached chicken, steamed fish, or fresh vegetable salads. Quick to make - just stir everything together.
Ingredients
- 1 tsp sugar
- 1 tbsp fish sauce
- ½ tsp lime juice
- ½ tsp rice wine vinegar
- 1 tsp fresh ginger, pounded
Directions
- Combine the sugar, fish sauce, lime juice, rice wine vinegar, and pounded fresh ginger in a small bowl. Stir until the sugar dissolves and the ginger is evenly distributed.
Notes
- Pairs well with poached chicken or steamed fish.
- Use freshly pounded ginger rather than dried - the sharpness matters here.
