A vibrant green sauce made by blending fresh green chillies with coriander, lime, and seasoning. It’s punchy and fresh-tasting, somewhere between a hot sauce and a green salsa. Works as a condiment for grilled meats, seafood, or noodle dishes.
Ingredients
- Rock salt
- Sugar
- 80 g green chillies
- Lime juice
- 6 coriander leaves
- 50 g chicken stock powder
Directions
- Place the green chillies, rock salt, sugar, lime juice, coriander leaves, and chicken stock powder in a blender. Blend until smooth.
- Taste and adjust the salt, sugar, and lime juice balance as needed.
- Transfer to a jar and refrigerate.
Notes
- Keeps for about 1 week in the refrigerator.
- Add rock salt, sugar, and lime juice gradually, tasting as you go.
- The chicken stock powder adds a savoury base. It’s a common ingredient in Vietnamese condiment recipes.
