A simple garlic-flavoured rice from Hoi An. The rice cooks in chicken stock instead of plain water, which gives it a savoury depth. The garlic is added after cooking so it stays sharp and aromatic rather than mellowing out. This is a common side dish alongside grilled meats and Vietnamese curries.
Ingredients
- 300 g long grain rice
- 300 ml chicken stock
- 1 tsp garlic, pounded
- ½ tsp sea salt
- 1 tbsp vegetable oil
Directions
- Place the long grain rice, chicken stock, sea salt, and vegetable oil in a rice cooker. Cook according to the machine’s normal cycle.
- When the rice is done, add the pounded garlic and fluff everything together with a fork so the garlic distributes evenly.
Notes
- The garlic goes in after cooking - this keeps its flavour fresh and pungent.
- If you don’t have a rice cooker, cook the rice in a covered pot with the stock, salt, and oil using your usual stovetop method.
- Pairs well with Vietnamese grilled meats or curries.
