Rice Porridge Pancakes

Recipe with video — This is typical leftover food. You have some rice porridge left over and want to use it for something else. What can we make? Starch in liquid. That calls for pancakes. And that is exactly what klatkager are.
Ingredients
- ½ portion rice porridge (otherwise it is not really leftovers)
- 2 eggs
- 1 dl flour
- 1 tbsp vanilla sugar (optional)
cinnamon sugar as a topping
- 1 tsp cinnamon to 2 tbsp sugar
Directions
Mix everything together in a bowl. Add the eggs first.
Fry in butter over medium heat.
Each pancake is 1 tablespoon of batter. Press it flat in the pan if it has come out a bit thick.
Flip them only once. They are fragile and do not like to be handled.

Unfortunately you cannot just fry rice porridge on its own — it falls apart. The egg and flour are only in the recipe to hold it together during frying.
You can use seeds from a vanilla pod instead of vanilla sugar. But it does not make much sense to spend on vanilla to rescue cheap leftovers. The frying masks most of the vanilla flavour anyway.
Can also be served with syrup.
