Rice Porridge with Apples

Rice porridge with apples is the lighter version of traditional Danish rice porridge — cooked entirely in water with apple pieces added partway through. It’s easy to digest and has a mild, fresh flavor. Stir occasionally, put the lid on, and let it look after itself.
Ingredients
Yields 4 servings
- 1 l water
- 110 g porridge rice (about 1 1/4 dl)
- 2 eating apples
- 1/2 tsp salt, to taste
To serve
- sugar
- milk
Directions
Cooking
Bring the water to a boil in a heavy-bottomed pot. Sprinkle in the rice while stirring constantly. Turn down the heat and put the lid on. Stir occasionally.
Finishing
After 30 minutes, peel the apples, remove the cores, and cut them into large chunks. Add the apple pieces and continue cooking for 10–15 minutes until the rice is tender. Remove from heat and season with salt.
Serving
Serve with sugar and cold milk on the side.
Notes
- Also known as “æbleris” — a classic, light everyday porridge
- Use tart apples like Belle de Boskoop for the best result
- Raisins can be added along with the apples
- A knob of butter stirred in at the end rounds out the flavor nicely
- Lighter than the milk-based version and easy to digest
