A Swedish shrimp salad where the shrimp are mixed into the sauce before serving. Different from the classic rakmacka, which uses plain mayonnaise with shrimp arranged on top.
Serve it on toast as a skagenrora sandwich, in a vol-au-vent, or as part of a smorgasbord. It also works as a filling for avocado halves or alongside boiled eggs.
Ingredients
- 100 g mayonnaise
- 100 g creme fraiche
- 1 tbsp lemon juice
- 1 bunch fresh dill, chopped
- 3 tsp fish roe (stenbitsrom or lumpfish roe)
- 1 pinch salt
- 500 g peeled, cooked shrimp
Directions
Combine mayonnaise, creme fraiche, lemon juice, chopped dill, and salt in a bowl. Stir until smooth. Fold in the fish roe gently. Add the shrimp and fold to coat evenly. Spoon onto buttered, toasted bread.
Notes
Makes enough for 4 sandwiches.
Skagenrora is a different preparation from the classic rakmacka – here the shrimp are mixed into the sauce rather than arranged on top of a mayonnaise spread.
