Air Fryer Zucchini Fries
Zucchini sticks get a three-stage coating of flour, egg, and a panko-parmesan crumb, then go into the air fryer until golden. It’s the same idea as a deep-fried breaded zucchini stick, just lighter, and the parmesan in the crumb is what gives the surface its crunch and savoury edge.
Cut the zucchini into short, even sticks so they cook through at the same rate as the crust crisps. Inside, the zucchini stays tender and a little juicy; outside, the crumb turns crisp and golden. The single most important step is spacing the sticks out in the basket — crowd them and they steam instead of crisping, and the crust turns soft.
There’s no fixed traditional recipe behind this one. It’s a modern air-fryer take on a familiar deep-fried snack, built around a few things every good version agrees on: a panko-parmesan crumb, an egg wash to hold it, oil spray for browning, and room to breathe in the basket.
Serve them as a snack, a side, or an appetizer, with marinara, ranch, or a basil yoghurt dip for dunking.

The zucchini
- 500 g zucchini (about 2 large or 3 medium), cut into 1 cm thick sticks, 8-10 cm long
The breading
- 60 g all-purpose flour
- 2 large eggs
- 1 tbsp water
- 50 g panko breadcrumbs
- 50 g parmesan, finely grated
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper

Directions
The zucchini
Trim the zucchini and cut it into sticks about 1 cm (½ inch) thick and 8-10 cm (3-4 inches) long. Pat the sticks dry with paper towels — a dry surface helps the flour grip.
The breading
Set up three shallow bowls: one with the flour, one with the eggs beaten together with the water, and one with the panko, parmesan, Italian seasoning, garlic powder, salt, and pepper mixed together.
Working a few sticks at a time, coat each one in flour and tap off the excess, dip it in the egg and let the extra drip away, then press it into the panko-parmesan mixture so it’s coated on all sides.
To cook
Lay the coated sticks in a single layer in the air-fryer basket, leaving space between each one — crowding them makes them steam instead of crisp, so work in batches if they don’t all fit. Spray the tops generously with olive oil.
Air-fry at 400°F (204°C) for 10-12 minutes, until golden brown and crisp. Sticks don’t need flipping partway through. Serve right away, while the crust is still crisp.
Notes
Leaving space in the basket is the one step that matters most for crisp fries — crowded pieces steam instead of browning.
Panko gives the crispest crust; plain breadcrumbs work too but come out a little softer.
For a lower-carb version, swap the flour for almond flour. For vegan, use nutritional yeast in place of the parmesan. For a leaner version, use egg whites only instead of whole eggs.
Leftovers keep airtight for up to 2 days. Reheat in the oven or air fryer at around 375°F (190°C) — skip the microwave, it turns the crust mushy.
